We're making gingerbread houses tomorrow. Any tips?

We used to do it years ago so I have an idea but we've not done it for years.

Got a recipe and templates? If not you can buy for £1.50 online the one I use and it's great!

Roll out the dough on greaseproof then the pieces don't need lifting off a board to go on trays.

Put all cut shapes in the fridge for ten mins to chill before baking.

If any shapes bulge in the oven chop the bulges off and get nice square edges whilst they're hot.

Using caramel (as in melted sugar, not sauce) is a million times better for using as glue than icing. It sets harder and more quickly. I'll never use anything else now.

If you do want to use icing, use the type with egg white in.

The long flat strips of sherbety red liquorice (or cola or rainbow ones) make good roofing felt for gingerbread houses and hold the ridge line together well with some icing as mortar.
