Thinking of giving it a go, but no idea where to order from. Not getting anywhere with the supermarkets. I do not have a local butcher or any such convenience, and the Internet can be a bit of a minefield...
Anyone able to recommend a trusted purveyor of geese?

I always buy a disposable roasting tin for it and use a large flat baking tray below for stability. Also scrunch up balls of tin foil to rest the bird on as a type of trivet. You will need to pour fat off part way which can be used for your potatoes.

Goose is the best, have it every year, never dry unlike turkey and very tasty. The fat is under the skin not in the meat so not a fatty meal. You don't need to cook the legs separately. You do need to drain/ catch the fat during cooking and there is a lot of it, but it keeps well so you have fabulous roast potatoes for the rest of the year. ☺️
