Nice Christmas-time meals

Looking for inspiration for lovely dinners - a bit more special than the usual spag bol et al - to have over the Christmas holidays. What do you all eat between Christmas and New Year for an evening meal or nice lunch? Thanks!

Grilled lemon sole with tomatoes capers and olives
Beetroot and onion tart with salad
Salmon fishcakes

One reason I really like the week between 🎄and NY, is all the leftovers, not too much cooking. I don’t do anything that’s a major faff.

Slices of the gammon, fried briefly with a fried egg and wedges.
Cold turkey and gammon with salad and jacket potatoes and/or macaroni pie (which is fantastic for a buffet).
Multi-veg soup made with stock from the carcass and last scraps of turkey.

One sweet thing that always goes down well and isn’t too much faff, is apple and mincemeat crumble.
