What veggie main did you have?

I'm expecting a couple of vegetarians to join the larger group for New Year's Day lunch. It'll be a big roast.

In spite of the fact I cook veggie through the year I seem to have a blind spot for roast dinner days. What did you have/serve for Christmas dinner?

DDs had a huge mushroom and parsnip pie with flaky pastry, lots left for today. In the past I’ve made them mushroom wellington and (though I don’t think it goes with gravy, but they do 😁) they’ve made themselves a big Brie en croute before.

I had a mushroom cobbler this year. Delia’s parsnip roulade is another favourite of mine. Could be worth checking with them what they enjoy as personally I can’t stand a nut roast and even a well made or high end one I would struggle to eat.

Dbil is vegan rather than veggie and had m
And s stuffed Turkey. He also had Aldi pups in blankets and stuffing balls said they were all delicious. He also had cooks apricot and polenta tart which was really nice very almondy though so not good if you do t like that marizipany taste.

We tried a selection of nut roasts in the run up to Christmas to see which one we'd like best but in the end good old Quorn roast was the one we chose. Today I've made a loaf of crusty bread so we'll have Quorn and stuffing sandwiches with cranberry jelly and lots of black pepper!

I also made a Sosmix bake which is just fried onions, mushrooms, celery and herbs cooled and mixed with Sosmix and an egg and then bunged in the oven till crispy on top. Can't wait for lunchtime to have some more!

I had a nut roast, but also did a nice cauliflower cheese that could have been tarted up more if necessary. Love a toad in the hole too.

We had Roasted cauliflower cheese filo pie.
Quorn do a veggie version of gammon, my DH likes that.

I made this mushroom Wellington. Made it last year as well. Very nice but massive. I made and cooked it the day before. Its lovely cold too. Freezes well.

I'm not sure.
MiL did lunch. It was indistinguishable veggie mush in filo with pine nuts on. It came from Waitrose.

@heathspeedwell Where do you buy Sozmix? Not seen it for years.

The kids voted for a Quorn roast, so that's what we had. Also some Sainsbo's vegan pigs in blankets which were actually pretty nice.

We tend to have lentil loaf normally for roast dinners. For New Year, which is traditionally steak pie (being Scottish), I do lentil pie for us veggies, partly because Italians eat lentils at New Year for luck with money, so now we do.
