Cookbook essentials

My 10 year old is a really good cook. I'd like to get her a cookbook for Xmas, which covers all the traditional basics.

I had a Delia that did this years ago - it's this still the go to?

Roux,cheese sauce, bolognaise, hm custard that sort of stuff

She can follow a recipe, but many are online and she doesn't have much access therefore. A book she can read and review would be perfect

My DM was given this cookbook when she was young and it is a great one for beginners. It assumes you know nothing and progresses. It’s got some recipes that are probably a bit out of fashion now but amazing for getting the basics down. I loved it and borrowed it a lot when I first moved out!

For "proper" basics as you say, (rather than a children's cookbook) then Delia's Complete Cookery Course is still the dog's.
I bought it for DD.
It deals with basics like bread, baking, pastry etc etc. It's not fancy, but it's the one I turn to for basics.
There's also her How to Cook series (1-3)
