Veggie main dish for Christmas Day

DD is newly vegetarian.

I need to make something that is easy to deal with on the day (happy to spend time in advance). She doesn’t like melted cheese much (goats cheese is maybe ok) and doesn’t love a nut roast.

I don't eat meat much at all I was veggie for years. I actually love the full dinner with out any meat. There is so much to go around it fills the plate. Or I eat salmon not sure if she eats fish. I'm sure whatever you make will be delicious 😊
