We usually have a second Christmas lunch the next day, then after that a turkey and ham pie, and turkey soup or turkey curry.

We're having turkey fajitas on Boxing Day.

I too ordered my turkey online and it is HUGE. We cooked it today (visit family tomorrow) and we have one breast and both legs/wings still left. So, I will be freezing all that!

turkey risotto is great.

I aqm going to fgreeze mine. It was fresh when I bought it, so I guess it is ok to frezze, then reheat when needed

We do turkey, stuffing and gravy pies for Boxing Day. Just spoon everything into little envelopes of puff pastry.

Turkey spring rolls go down well too.

Think it's ok to freeze cooked turkey, but I have lived in Asia for seven years and have a cast-iron gut.

We're going to freeze a lot of ours (was previously frozen when uncooked which is fine) and then the rest is laid aside until Weds.

I've just had a cold turkey, stuffing, roast potato, sausage/bacon thingy sandwich - on lovely homemade parmesan and sun dried tomato bread. Fab!

pie!

soften some leeks, some carrots, add some mushrooms, herbs if you have them. add any leftover gravy that you have, touch of cream...mm yes, cream, make a sort of sloppy stew

bung in an oven proof dish with puff pastry on top

it's delish

ibroughtxmascake · 25/12/2007 20:52

mazzystar, how long in the over for? temp etc? sounds lovely

I have frozen cooked turkey before, just make sure that it is fully cooked when re heating.

I have reheated in gravy before for a quick roast, as well as making pies.

Pie sounds lovely.

Some other ideas:

  • turkey hash: chopped up turkey, leftover stuffing, chopped up leftover potatoes all fried together. It's an American thing, and good for breakfast
  • turkey and rice/noodle soup
  • sandwich (i know, zzzzzzz): turkey, cranberry sauce, brie, some leftover stuffing, grilled
  • turkey fried rice
