We tend to have bubble and squeak on Boxing Day with the stuffing and pigs.
Leftover roast goes in a pie with leeks and mushrooms. That’s 27th and 29th.Some gammon in there.
Rest of the gammon as carbonara on 28th.
Looking forward to non Christmas food from tomorrow!

Had carbonara with the ham. Good idea about patatas bravas!
Leeks and cabbage, stuffing, roast root veg left. And more ham!

I just made soup with a load of peeled swede that was forgotten on the day at dd’s. Added onion, carrot, potato, and an end of celeriac that was lurking in the fridge. Chicken stock (cubes and homemade) plus a load of pepper, stick blender in the pan, sorted.
Very thick so will add milk and butter before having it for lunch tomorrow.

I've made broccoli & stilton soup with home made turkey stock.

I've just put turkey & mushroom risotto in the slow cooker.

I like this spell of cooking much better than cooking for Christmas. Smile

The last scraps of turkey can make a lovely mulligatawny soup - can be substantial enough for a main meal.

Sauté 1 onion, 2 celery stalks and 1 carrot, all diced, in 50g butter. Add 1 1/2 tbsp plain flour and a dessert spoon of curry powder, cook gently 5 more minutes.
Add 1 litre chicken stock (or turkey stock if you’ve made some from the carcass), simmer half an hour..

Add 4 tbsps basmati rice, half a large or one small diced apple (don’t peel it) the diced turkey (or chicken) salt and pepper if liked, and a pinch of dried thyme.
Simmer until rice is done.
My recipe says stir in 100 ml double cream at the end, but I don’t like cream so I never do. Recipe also says one fresh diced chicken breast, but I’ve always made it with cooked leftovers.
Extra rice and chicken/turkey can make it more substantial.

Delish and very warming on a cold, miserable day.

Christmas dinner soup- literally throw everything you have leftover into a pan, cover with water and add a stock cube. It has to have potatoes or quite a bit of veg for thickness and it has to have stuffing for the Christmas dinner flavour so if you haven't got any of that leftover then put half a packet of stuffing mix in. Then simmer and blend.
