It was on This Morning and seemed too easy. So I had a go and instead of getting up super early to get the bird in the oven, I used his steaming and browning method and it took only 2 hours and 15 minutes. And everyone loved it. And it made gravy in the roasting tin that I just had to decant off and thicken up a bit. Won’t be using any other method from now on.

I saw Phil first so this a few years ago and I have stood by it ever since.

Turkeys do not take hours to cook!
Best gravy ever too.

I've been using his method for years now, works brilliantly every time. I used to always buy posh ready made turkey gravy as a back up just in case I mucked it up but it was never really needed as always delicious. I now have faith in myself and Phil's recipe, never goes wrong.

The cooking instructions on turkey packaging have a load of extra fail safe time added to ensure the turkey is sufficiently (over) cooked. I think they have to do this as not all ovens are equal and not everybody pre heats etc etc. Our turkey this year the packaging stated 4hr 15m - I had already decided to try the upside down method this year so took it out at 2h 40m to turn it right way up and thought that it actually looked cooked! so I checked it with two different meat thermometers and it was perfect and turned out the best turkey we've ever had. Hate to think how messed up it would have been with another 90 minutes cooking.

isnt it harmful to make gravy on the roasting tin? roasting tin not meant to be used on normal hubs only in oven.

I’m with you only discovered this method 3 years ago, As I got fed up with overcooked dry turkey. 5kg turkey butterfly cooked in 2 hours and 15 minutes…….Absolute game changer for us.

If you go on Phil vickerys website it gives timings for all sizes of whole turkeys and turkey crowns. So you can adjust cooking times for the size you need.

Only wished I’d discovered it years ago!

The gravy makes itself in the roasting tin in the oven. Then I poured it into a pan on the hob and thickened it up. Still have the back up pouch of posh gravy that I bought in the cupboard! Not needed.
