Veg main for Xmas day?

I'd like to make a veg main for two teens on Xmas day. Any quick, easy yet fabulous suggestions? No nut roast.
There will be potatoes and all the trimmings!!

Large filo money-bags filled with chestnuts, cranberry sauce, shredded leeks, grated carrots, whatever you fancy

Sorry only just seen your question. I often do a wellington with layers of our favourite things so this year it includes a sweet potato and chestnut layer, a garlic, breadcrumb, walnut layer, spinach and onions and goat cheese and redcurrant jelly all in a puff pastry case. Other things we have had include walnut, red wine and chestnut loaf ( but I have mislaid that recipe now) and mushroom, red onion and cheese choux pastry thingies.
