I’m sure there’s many variations Smile I personally love the classic jelly, custard, cream trifle.

I make mine like this.
Raspberry jam Swiss roll cut up as base.
Frozen raspberries defrosted in a saucepan with a dessert spoon of raspberry jam.
Lace this with brandy.
Use Mary Berry’s recipe for real custard using half single cream and half whole milk. After this has set top with extra thick cream and lots of flaked almonds.

Our family recipe trifle used to be sponge fingers soaked in red jelly then another layer of different coloured jelly on top, then a layer of pink blancmange, then custard, maybe another blancmange then freshly whipped cream and sprinkles to finish. Craving it now!!

antisocialsocialclub it is good! Was funny when my brothers cordon bleu trained GF offered to make a trifle the first year she came for Christmas and produced a more traditional one ! I’m afraid we were all rude and thinking ‘where’s the jelly and blancmange’ 🤣🤣🤣I don’t think she ever realised her beautiful trifle wasn’t what was expected 😁😁

Madeira cake.
Chop up, spread with jam and pour over sherry.
Warm up packet of frozen forest fruit berries add a bit of water..
Thicken with a bit of cornflour until jammy.
Pour over the sponge.
When it's set pour over the custard.
Top with whipped cream and decorate with whatever.

I don't eat jelly unless its vegetarian, there are some out there that are ok (texture is slightly different but good enough)

Best trifley dessert from my youth (pre-vegetarian days)
Swiss roll in the base
Orange/mandarin jelly with tinned mandarin segments in it
A layer of mousse made with whipped up evaporated milk mixed with cool liquid jelly (use much less water)
Cream and sprinkly bits

I would totally love the Baileys one, and in fact, have some spare Baileys.

However, I think I need to go traditional to cater to elderly relatives. I am talking sponge fingers (or similar), custard and cream.

I agree that trifle was bloody lovely. Have to admit I had an emergency back-up gateaux which remains untouched. Everyone wanted the trifle. Thanks so much for sharing.
