Sausage meat stuffing

I am making christmas dinner this year. I have purchase 2 x paxo stuffing mix and want to add sausage meat and fresh cranberries to it, but I do not know the ratios or anything else I should add. Can anyone help? or have ideas?

I do 200g sausage meat with one pack of 170g stuffing. That's how my nan does it and it's delicious. I'm sure some excellent chefs will have other recommendations though! I literally just hand mix (or get dh to smoosh it all together) the sausage meat and dry stuffing mix, form into a loaf shape, and then cover in foil and bake for 45 mins. It then gets sliced which makes it perfect for sandwiches later.

I’d push the boat out and not use Paxo at Christmas, though it’s perfectly nice and good.

My Christmas Day stuffing is 1 pack of peeled, vacuum packed chestnuts (finely chopped), 1 pack of plain good quality sausage meat, a third of a packet of fresh sage (well chopped), a white bread roll blitzed up for breadcrumbs, and an onion finely chopped. Mix together and if you want a finer texture blitz in the food processor to personal taste.

It’s absolutely delicious, and I think this year I’ll make double the amount.

Agree would skip paxo. I'm a bit of a stuffing obsessive. M&S pork sage and onion loaf has been on every one of my Xmas dinners bar about 2 due to my love of it..alongside the homemade "butchers breadcrumb mix, sausage meat with our added extras"
