We usually do a buffet for about 15 on Boxing Day, looking for some new ideas for this year, especially as we had to miss it last year.

Share your favourite buffet treats please

I always make this cheese and onion slice https://www.bbcgoodfood.com/recipes/easy-cheese-onion-slice and the sausage one www.bbcgoodfood.com/recipes/garland-sausage-roll-slice.

Easy to prepare ahead and then stick in the oven when you want them. And they are forgiving if they're left to cool as well. My bugbear with buffets is how long it takes to get everything ready. Does my head in working out what needs to go in the oven next and for how long.

I serve them with salad, various coleslaws and buttered potatoes. Always goes down well and I make extra for leftovers but never have any left.

A massive cheese/grazing board with:
Goat’s cheese, Brie, Wensleydale, Stilton, cheddar and Edam
Chutneys and pickles
Grapes and fig slices
Parma ham, salami and prosciutto
Olives
Cheese biscuits and slices of French baguette
A few types of pate: Brussels, mushroom and smoked salmon

For pudding:
Clementine, kiwi, blueberry and raspberry fruit salad
Yule log
Christmas cake
Stollen
Turkish delight

I have a couple of Morrison’s frozen lobsters in the freezer, I’m going to get some mini plastic (reusable don’t worry) pots and make up miniature lobster cocktails!

OinkPinkPonk · 21/11/2021 18:14

Morrison's do made to order platters of wraps/sandwiches and they are really nice!

Cheese covered with chorizo.

Fruit kebabs.

Dips, breadsticks, celery, cucumber, peppers, crisps.

Bacon and cheese mini quiches

Loaded half jacket potatoes, cut in half scrap the inside out, mix it with sour cream and cheese, cook for little bit longer top with crispy bacon.

Chicken wings.

Indian selection.

I'm now hungry

Our boxing day spread consists of cold turkey & ham , cumberland sauce, pork pie & mustard, cold sausages, watercress salad, green salad with honey and mustard dressing, cucumber salad, potted shrimps, truckle of Stilton and Carrs table water biscuits, red wine. So lots of fresh green among the rich things. A hot element is always nice so we do tiny new potatoes with herbs baked in the oven en papillote but good baguettes are nice too.

For puddings this year we are having a large rectangular home made mince pie with a pastry lattice with brandy chantilly cream, limoncello tiramisu, orange and cardamom sorbet with pistachio biscuits.

I’m doing a Thanksgiving style feast this year, so will all be the sort of thing you can pick up or eat with a fork standing up. I just googled best thanksgiving dishes and picked the ones that look easy. Making roast turkey, ham in coke, Mac and cheese, mash, green bean casserole, candied carrots and pecans, cornbread with maple Creme fraiche, cheddar biscuits with honey butter, roast sweet potatoes with marshmallows, it’s a bit of a sugar fest but soooo good!

Bajan fish cakes I use a recipe from a book we picked up in Barbados but it's similar to this. www.gobarbados.org/bajan-fish-cakes/ we get the salt fish from Tesco

Btw Nigella's Christmas recipe book is really good on dishes to be served in and around Christmas. I thoroughly recommend!

Cherrydown · 22/11/2021 21:25

Thanks for the ideas, they all sound lovely!
