Marzipanning cakes

Is it too early to marzipan my cakes? If not how long can I leave it between marzipanning and icing?

No it will be okay to marzipan the cakes now. I always think it's better to leave it a day or so between marzipanning and icing. If marzipan is too soft it makes it more difficult to keep a nice flat surface especially with royal icing. Having said that have done them one after another- depends how much of a perfectionist you are!
I usually stick the marzipan on with boiled, strained apricot jam. If using regal icing for the top (rather than royal icing) brush some gin onto the marzipan just before you put it on.

Thanks SM, I couldn't wait and have done it. the cake smells very strongly of booze and I can't wait to try it, unfortunatly now it's on the cake boar it's too big to go back in the cake box!

I was going to say i tend to marzipann then leave for upto a week before icing the cake.

I just put the upside down box to cover the cake until i ice it.

apart from adding more alcohol... what does the gin achieve? (am bad this year mine has only been fed twice - one at top and one at bottom)

Not sure but our cake decorating tutor used to tell us to do this to stick the icing on with.

no -meant to leave at least 2 days before you ice it so this weekend should be fine.

can i just say - ready rolled marzipan - so easy you can ice the cake even after a couple of glasses of sherry [hic]
