Roast lamb

Am thinking of doing a slow roast lamb type thing for Christmas dinner. Has anyone got any nice recipes?

What did you do with it (side dishes & extras)?

I really like dauphinoise potatoes with lamb, lots of rosemary. And poke lots of garlic into the lamb.

I do roast lamb, scored with garlic and fresh rosemary (roast for 2-2/1/2 hrs for a 6lb leg at 400oF), and then all the regular trimmings:

Roast potatoes
Broccoli/cauliflower cheese
Mashed Swede
Sweetcorn
Balsamic brussel sprouts
Yorkshire puddings
Pigs in blankets

And so on. Trimmings are totally dependent on what you prefer!

I have never tried this recipe, however the photograph above the recipe looks delicious!!!

Note: Lamb is quite rich, so perhaps have the main course, then have a short break before serving dessert.

We are having shoulder of lamb tonight, slow roasted for hours with braised vegetables, garlic, rosemary, thyme, bay and vermouth.

Waitrose have 1/3 off joints right now, so it was only £5.99/ kg. (We have 2 more in the freezer).

We will have some green vegetables and baked potatoes (baked on the shelf below).

Personally, while I like braising vegetables in the juices off the meat, I would find cauliflower cheese a bit rich with this.

Neeps and tatties would be nice with slow cooked lamb.

Leg is a bit more expensive than shoulder; shoulder needs longer cooking as it would otherwise be tougher but the flavour of slow cooked shoulder is superb.

I made this a couple of weeks ago and it was lovely, I used leg, because I'd already bought the meat before deciding on the recipe

Add anchovies for seasoning, they will melt into the juices and season it all perfectly. Definitely a simple, freshly made mint sauce. A garlic and parmesan mashed potato gratin. Baked in the oven and goes really light and fluffy. Some simple steamed vegetables with a knob of butter and squeeze of lemon juice (peas, carrots, broccoli, green beans all mixed together)

I did a sprout dish this weekend with preserved lemons and pomegranate seeds. Very good.

Perhaps some quick pickled onions for serving.

Mouthwatering! Thanks all. I was thinking of Boulangere potatoes with it, and one or two veg sides but DH was horrified at the thought of no roasties, pigs in blankets etc so I think it's likely to be all the traditional trimmings.

I have 10 for Xmas dinner this year after a blessed reprieve from the in-laws during lockdown!
