A really good nut roast?

I really fancy making a lovely veggie nut roast or similar main for Christmas Day to have along with the usual turkey etc. Does anyone have any recipes you love? Preferably something that can be made and frozen in advance?

There was a thread about veggie Christmas mains recently and someone recommended Artisan Grains nut roasts, Ocado & I think Morrison’s sell them, neither of which are near me but if I’m ever near a store I’m going to pick one up to try. They are add water and roast in the tray. Possibly a better option than making & freezing one.

I made this , with slight variations , a couple of weeks ago and we loved it. I served it with marinara tomato sauce rather than the mushroom gravy suggested, and I added some roast broccoli .

DH not a fan of apricots so I substituted cranberries. It makes a large roast so I cut it down but still have about 1/2 in the freezer.

I make Jack Monroe's vegan nut roast and it is delicious but I find it doesn't slice, it all crumbles but that could be me doing something wrong!

I make up the recipes as i go along but they key ingredients of a luxe christmas nut roast are chestnuts, vac packed, along with some normal mixed chopped nuts. And a layer of something surprising and yummy through the middle like cranberries or fancy mushrooms. And if you have a bundt tin you can make it wreath-shaped.

This one has become our absolute go-to, except I cut (several) corners if I'm just making it of a Sunday - 200g chopped mixed nuts and forego the cranberry topping and porcini. But for Christmas Day, we'd go for all of it. Smile

If anyone has any more nut roast recipes I would be very interested! I love a good nut roast (and it works so well with the "trimmings") but I don't like the ones filled with breadcrumbs/mushrooms etc.

Does anyone have really NUTTY one? Preferably that slices well and is good hot and cold? Smile

We love the frozen one from Cook (it is vegetarian, not vegan, although they do some veagn nut roast stacks too). It has caramelised onions on top of it.

Deliciously Ella’s Herbed Nut Roast - it's delicious! I make it at Christmas "friendmas" for my vegan best friend, and everyone devours it to the point I make it double the size.

My only hint is to buy minced mushrooms otherwise it's very time consuming.

She also has a mushroom gravy which is perfect for the loaf.

I made a nut roast for the first time last year and had the same problem! A friend suggested I add one or two eggs and bake again, and that did the trick!
