Hello!

I am hoping for some help with veggie main ideas for Christmas and Boxing day.

DH is veg and usually I make him a mushroom wellington which is fine, but I'd like to branch out a bit. On Boxing day he has cauli cheese, peas and red cabbage which is basically the sides to our roast gammon. Last year I got him the M&S vegan nut roast for Christmas eve which was really unexpectedly good.

But I'd like to branch out. He detests goat cheese and butternut squash but otherwise is happy and appreciative of everything.

I often make a veggie haggis Wellington. I oven cook the haggis, make a mushroom garlic and spinach duxelles and put in puff pastry. It can be made ahead and frozen if I'm half organised.

It's probably a bit too similar to your mushroom wellington, but I've made Chestnut Bourguignon pie for BIL a couple of times and he loved it. It's very easy too

I’ve seen this thread title a few times and keep reading it as “lonely veggie man”. I’m imagining some poor bloke who can’t find a girlfriend due to his strong vegetarian beliefs.

Dd had Camembert and cranberry puff pastry thing (M&S I think, my dm bought it) and I buy the portobello mushroom pies from lidl a lot, I also use a lot of goats cheese

I use to always just have the dinner without the meat but a few years ago I started adding a creamy pasta.

Personally never enjoyed nut roast or wellington etc...

I make this Cranberry & Lentil Bake for DH who loves it. Really easy to make just add more cranberries than the recipe says

Delia Smith's pecan, roasted veg and mozzarella strudel is lovely, and can be made in advance. Leftovers reheat well too.
