What is the best chestnut stuffing recipe?

I'd love to make chestnut stuffing next year - we didn't have any stuffing this year. My grandmother used to make the most lovely chestnut stuffing at christmas and it was delicious with Christmas lunch. Does anyone have a good recipe they could share?

I just do a pack of best quality sausage meat, a vacuum pack of cooked chestnuts, about 200g white breadcrumbs, 1 onion and a tablespoon of fresh sage. Blitz together in food processor. Bloody gorgeous.

Sweat a couple of shallots in oil, add 3/4 finely chopped mushrooms and finely chopped Spanish ham/ palma ham - 2-3 slices. Cool for a few mins. When cooled add 250g good sausage meat, half pack of chestnuts chopped up. Absolutely delicious.
