I'm not very good at winging it for cooking so am relying on some professional help

I'm doing a ham using the Hairy Bikers recipe, Matt Tebbut's (Saturday Kitchen) Marmitako (tuna steak, pepper and tomato stew) for Christmas Eve, Delia's cherry glazed duck and Richard Bainbridge's mini marshmallow cheesecakes (tested last weekend - delicious) for Christmas lunch and Jamie's fish pie (very popular in our house) on Boxing Day.
