Christmas Buffet Vegetable Ideas?

We're planning to have a little buffet Christmas Eve - think cocktail sausages, chicken popcorn, all the Christmas party food that you get in the supermarkets, that's the level we're at.

Does anyone have any suggestions for how to incorporate some vegetables? I do enjoy garkic mushrooms and onion rings but I'm not sure more breadcrumbs/batter are really required. Not a fan of crudités.

Basic would be cherry tomatoes, chopped iceberg lettuce, slices of melon, coleslaw.
Posh maybe Cubes of feta with olives and cucumber.
Slices of tomato with basil and a drizzle of olive oil and pepper.
Lightly braised green beans with a cheesy breadcrumb.
Some kind of red cabbage slaw.
Any kind of salad trims helps freshen up the platter - like lettuce, red onion and grapes on the cheeseboard, or quartered tomatoes and cucumber around the edges of the platters.

Coleslaw? Winter version with red cabbage or my fave: celeriac roulade (shaved or grated celeriac with Mayo, lemon juice & mustard)

Pickled beetroot

Fennel & orange salad

Carrot salad

Cherry tomatoes and cheese on sticks

Cocktail sticks with baby mozzarella ball ,folded basil leaf and cherry tomatoes are yummy as are

melon and Parma ham sticks

Asparagus spears with hollandaise dip

Water melon and feta sticks (cubed )

Griddled peppers and courgettes

Baby peppers halved and oven baked filled with cherry tomatoes, anchovies, garlic ,balsamic and drizzle of oil till soft

Chopped mushrooms cooked in tarragon cream or sherry on crostini.
Cherry tomatoes halved and topped with cream cheese. I let them soak, cut side down in balsamic and a little sugar for a while before topping.
Whole Little gem leaves drizzled with a Caeser type dressing.
Supermarkets have loads of veggie/vegan canapes this year.

I'd have a fresh cucumber salad and a massive bowl of watercress, maybe roquette, with some chicory with a light apple cider vinegar, honey and and walnut dressing.

But you can make it look more Christmas if you want in a sort of salad wreath:

I do a salad with couple of bags of mixed leaves, couple of chopped avocados, and 50 gms toasted pine nuts, dress with olive oil and balsamic vinegar, quick and always goes.

Thanks everyone :) lots of ideas! Will report back when I've decided what to go with. It's only for us so not worried about hygiene issues!
