What are the vegetarians having this year?

I have 2 teens who have turned vegetarian this year. Any ideas/ recommendations for good (and relatively easy) mains please?

If I can be bothered... a veggie loaf thing (pastry and layers of: mushroom mix, oats and veggies, veggies cooked with egg) and if I can’t be bothered - veggie haggis with all the (vegetarian cooked) veggies.
