Keen angler but I've bought him every single fishing/angling trinket/accessory/mug/glass/flask etc etc and his 'mancave' is full of such,& I couldn't afford any 'actual' angling stuff
Isn't interested in food or cooking (well he is but is always on a diet and wouldnt appreciate a sabotage!
Ditto alcohol.
Likes nature and outdoors
Likes his car. Likes tv but very particular about what he watches. Likes university challenge!

I got my Dad some signed Bear Grylls books last year, which he really liked.

What about a nice bird feeder and fat balls/seeds and a hellebore plant (lots available just now) that would go nice with a bird box. Along the same lines a windchime for the garden or a wee solar light ornament.

Last year my sister got my dad and stepmum a nest box with a wireless camera so you could watch what was going on inside. I thought that was a pretty inspired present.
