I am so excited for Christmas dinner hahaha! Every year I make a JUICY beef Wellington! It’s such a luxury meal it can only be justified for Christmas dinner. Here is mine from last year, I’m getting so much better after 9 years of practice lol! Beef Wellington, pigs in blankets, stuffing balls wrapped in bacon, spiced red cabbage, parsnips, roast potatoes, and a bowl of sprouts for me, all covered in a red wine gravy (which I still haven’t found the perfect recipe for, maybe this year!

I always decorate my table with holly and fruit!

Wowzers that looks amazing.
I’ve always wanted to do beef wellington but dh doesn’t like mushrooms and even if he did he’s a bit obsessed with having turkey at Christmas.

I don’t have any pictures but we will have Turkey crown covered in bacon, pigs in blankets, stuffing, roasties, Yorkshire’s, braised red cabbage, sprouts with bacon, and roast parsnips.
Can’t wait.

Do you mind me asking if you use a particular recipe? I’ve ordered the ingredients to make Gordon Ramsey’s beef Wellington but I’m scared of messing it up Grin

@Whatarewordsworth that’s the recipe I use! My first one was a rather oblong affair hahaha, are you doing it for Xmas day?

On Christmas Eve I do most of the prep, beef sealed and put to one side, then make the mushroom garlic mix, my advice is, cook the hell outnof that mushroom mix in a dry pan to get as much moisture out as you can. Then I lay out the Parma ham, put the mushroom mix on then the beef and use the cling film to roll and tighten. I do this early Christmas Eve afternoon. Then in the evening once it’s had a good few hours in the fridge I take off the cling film and repeat the cling film roll with the pastry, I then leave it in its cling film in the fridge until time to cook the next day.

Watch Ramsy do it a few time on YouTube to make yourself as familiar as possible with the steps and it will be delicious!

@EminyBOO mmmmmm that sounds soooo delicious! My ex husband didn’t like the idea of changing from turkey but now he can’t wait for the Wellington each year (he still comes for Christmas Day) and would never go back to turkey and my DS has never known anything other than Wellington hahaha, as a rule I’m a Christmas purest but I think the welly has a festive feel to it and is just so opulent. Oh I’m filled with festive cheer right now (the feeling type not the boozy type hahaha)

My venison Wellington, not done at Christmas tho! Has home made pate in it too, love it. The recipe is from "game, a cookbook" by Trish Hilfery & Tom Norrington-Davies.

@TrickyD oh how beautiful! That looks soooooooo Christmassy! I can just imagine hanging out in your house with a glass of bubbly waiting for the cling film to be taken off so I can dig in!

@KarenW mmm I’ve never tried a venison welly, good work! The meat looks cooked perfectly!

I’m not bad in the kitchen but I’ve never done a Wellington before! Not sure what our plans will be yet, we’ll either have it on Christmas Eve or Christmas Day depending on whether we’re able to see family or not.

I made Delia's individual beef wellingtons for Christmas one year. As I served them my DF remarked that they looked like Cornish pasties! They were lovely though.

I've always fancied a beef Wellington or a rib of beef..

We never do turkey, sometimes goose or duck.. You're s looks fabulous!!
