Single person cook book

My mum lost my dad about 9 years ago and has got stuck in a very dull routine of spag Bol, meat and two veg, stew etc

She said yesterday that she was getting really bored with eating the same old thing but wasn’t inspired to pick up a cook book as all the ones she has are family orientated and whilst batch cooking is great she wants to enjoy a meal once rather than make 10 portions.

I need to find a book for a single person without it being in your face that it’s for a single person as I don’t want to upset her.

She is a really good cook and adventurous usually but now doesn’t get excited by cooking and eating on her own - I’d like to give her some of her spark back and get her eating more interesting meals.

Can anyone suggest anything!?

Delia does the classic "One Is Fun" cookbook which is really good. You should be able to find a second hand version online for about 99p. Dont be put off by the name

Nigel Slater did a cooking for one book - table for one I think.

DH has been away this week and I've had:
Salmon fillet and asparagus
Quiche (shop bought) and salad
Stuffed ravioli with butter and cheese

Thinking about the weekend now.

Nigel Slater 30 min meals is good for one when you don't have much energy to do something complicated. lots of recipes so you can always do something.

I hadn't really thought about the title of One is Fun. Makes it difficult, I agree. However it really is a great book; I was given a copy about 30 years ago and I'm still cooking favourites from it now for DH and I.

Would one of those subscription food boxes be an idea? That come with the recipient card and herbs and stuff weighed and she buys the fresh bits? Might be a bit less daunting than starting completely from scratch, especially as you don't have spend the time choosing what to do. The bargains referrals thread has discount codes I think.
