Leftover Christmas cake recipe and ingredients. Ideas?

I've just prepped my Christmas cake mixtures. It is Delia's Creole cake. I made 3 cake mixtures, now in fridge for a week marinating in loads of booze Wink. I had 1/3 of the ingredients left and so made this up. I am not sure what to do with this. Also, I have about 200g of currants left.

So, need some help.

  1. What should I do with the 1/3 of recipe mixture? Should I make a smaller cake or tin of beans Christmas cake. I am not sure of the timings if I do this.

  2. Make mince pies with the mixture?

  3. Not sure what to do with 200g of currants.

I don't want to buy any more ingredients as I will only be left with more ingredients. I bunged in all the remaining cherries, candied peel, raisons, nuts etc. and just have the currants left.

Tuna tins and make little individual cakes as gifts, personalise them maybe as teacher gifts?

Get decent quality vanilla ice cream, doesn't need to be hagan das but nice. Let it go little soft and mix in the fruit & booze, refreeze & you have Xmas pud ice cream. Just don't let it go to soft as the texture will be wrong
