I've just prepped my Christmas cake mixtures. It is Delia's Creole cake. I made 3 cake mixtures, now in fridge for a week marinating in loads of booze
. I had 1/3 of the ingredients left and so made this up. I am not sure what to do with this. Also, I have about 200g of currants left.
So, need some help.

What should I do with the 1/3 of recipe mixture? Should I make a smaller cake or tin of beans Christmas cake. I am not sure of the timings if I do this.

Make mince pies with the mixture?

Not sure what to do with 200g of currants.
I don't want to buy any more ingredients as I will only be left with more ingredients. I bunged in all the remaining cherries, candied peel, raisons, nuts etc. and just have the currants left.
