My christmas cake was very nice this year

I say this year, it is the first year I made one. So yummy. This Nigel Slater recipe for small cakes. I think the whole hazelnuts particularly nice (they went soft with all the booze). With posh marzipan and shop bought ready rolled royal icing on top.

Made my first ever Christmas cake and surprisingly it was amazing!! It was a recipe from BBC good food called “As you like it Christmas cake”. I fed it using earl grey tea as I’m not a fan of boozy cakes. Used ready roll icing and marzipan and the DS’s decorated it using little stick on icing Santa faces. I’m so pleased with it! Even the MIL (who is cake queen!) loved it!

I've used the Mary Berry Classic Christmas Cake for years, and it was brilliant this year as ever. It's also drunk half a bottle of brandy in the last two months Xmas Grin

I haven't eaten mine yet , I made 2 smallish ones .
Opened one up to put the marzipan on and thought "Hmm , bit dry"

So it's back in the greaseproof&foil with more Amarretto .

Might get round to decorating it next week , then give it a try .

Somewhat disappointed with mine. Fruit soaked in brandy for three months! Plenty of time for an expected moist cake but think I may overcooked it a bit. Seems a tad dry

Nigella from domestic goddess but treacle instead of marmalade. Very moist. I don't feed it at all. It's very, very good.

Dh said this year's was the best yet, which is nice. I follow Delia's recipe and have done for years, but it always gets tweaked. I use golden syrup instead of black treacle, and aswell as currants, cherries, raisins and sultanas, I also put dates, apricots and prunes in. Definitely no mixed peel as it's the work of the devil!

I use Delia too but despite soaking and brandy it was a bit dry this year. Might try the golden syrup instead of black treacle though. Stonerosie67 how many dates do you put in? I might try dates to replace mixed peel. Should I use the same weight do you think?
