Inspiration for leftover turkey

I’ve got bloody loads of the stuff - apart from the obvious (sandwiches, salad) can you give me some ideas what to do with it? Easy ideas please - I’m no Nigella

Paul Hollywood’s ham and turkey pie. If you’ve got any stuffing left over, the Hairy Bikers do a similar pie with that.
I use the Hairy Bikers’ turkey jambalaya recipe and Jamie O does a good turkey risotto.
I’ll probably end up doing a pasta bake too!

Fry some leeks, add chopped Turkey, add creme fraiche, some chicken stock, some tarragon, spoonful of mustard.
Heat through.
Cover with ready made puff pastry and bake until the pastry is golden.
Hey presto, Turkey and leek pie.

Another is shred and use to make enchiladas .

We have Christmas dinner #2 on Boxing Day.

Enough leftover turkey and veggie roast, roast potatoes, parsnip puff and celeriac mash so we just do some fresh vegetables and finish it all off.

Last year there was less left from Christmas Day so we had smaller portions and added a cheese course with cheese, crackers and celery.

We only have those dishes at Christmas so having it twice isn't a hardship.

Turkey fried rice. Fry turkey, onion, peas, sweet corn, whatever veg is handy, add one pouch of cooked rice per 2 people and soy sauce. Maybe ginger, chilli if you've got any.

Turkey broth, turkey hash, stir fries, curry, in pasta with a nice sauce. There are loads of easy things to do with the leftovers!

How long do you tend to keep your leftovers for? I’ve just read 48 hours ...

I pick them all off the carcass, divide them up into portions and stuff them in the freezer. Then for as long as it takes me to use them up - usually February.
