Can you do veg in advance?

Dh wants to prep veg today put in fridge then cook tomorrow has anyone done this is it ok? We

Yes - you can peel the potatoes, and keep in water ready to par-boil.
And prep the carrots and sprouts and parsnips in advance too. No need to keep in water.
In fact, it's how I always do it.

Yes. I always do my Sunday roast veg on a Friday afternoon because I always work 12 hours on a Saturday. I leave it in pans of wateron the stove. It's absolutely fine. Lots of peopke think it won't be but it always is.
I did my sprouts and spuds last night and am doing the rest if my veg this morning.
Parsnips can curl though so I do them tomorrow.

Its what I do. I shall prep all the veg today and leave them in pans of water. Quite a few people on a thread on here a week ago were talking about par-boiling their veg in advance. I wont be doing that though.
