I've done this one for Christmas a few times and it went down well. Not too heavy.

I made the main dish the day before, adding salmon just before serving.
Not tried freezing it.

They all sound nicer but spiced parsnip sounds most Christmassy

I'd go for pea and mint, served in small cups with a blini topped with soft cheese and smoked salmon on the side.
The others sound delicious, but made with veg likely to be in the main course.

I've never actually made it Xmas Blush but I'd go for watercress. Nice-looking recipe at BBC Good Food.
