Vegetarian Christmas gravy

I've been googling non stop but I'm looking for opinions. I want to make a veggie gravy this year but I don't want to use alcohol or have to roast two trays of veg. I usually keep the dregs from other roasts during the year - added to a jar in the freezer, but husband defrosted them because he thought they were rubbish! Anyone got any foolproof recipes?

I try a new one every Christmas in the search for a perfect gravy! I can’t be bothered to be cooking hundreds of onions for hours on end this year and this recipe looks easy!

Caramelise some onions w/ butter, sugar and balsamic, add a bit of flour, mix through. Add veg stock (I just use a cube), some Marmite and some red Bisto granules which will help thicken it up Smile

Onion gravy granules ... add a teaspoon or two of cranberry sauce. Takes as long as it takes to boil a kettle, I get no complaints (disclaimer, I eat meat but I do the same with turkey gravy granules!)

Half a Knorr stock pot thingy, a couple of tea spoons of soy sauce, half a teaspoon of yeast extract, a heaped teaspoon of cornflour (or 1 1/2 if you want it a bit thicker) and about half a pint of water.
Bay leaf and sprig of parsley. Caremelisedd onions if you want it really posh.
