Buffet ideas for different diets

On Boxing Day I'm doing a buffet lunch for 11. Most are omnivores but there are also some with specific requirements and I don't want them to feel that they don't have much choice:

1 vegetarian
1 pescetarian
1 who eats meat but has a diary and nut allergy.

The savory stuff is pretty much covered. I am providing two versions of pastry (one with butter one with Stork) for sausage rolls, am poaching a salmon and there will be left over Christmas meat. Making bread rolls with oil and not butter, falafels, quinoa salad, actual salad, crudités and breadsticks with dairy and nut free dips, vege feta and nut free pesto tartlets, and lots of crisps.

However dessert is surprisingly limited for the non dairy person and I don't want them to have only one choice. I will have left over Christmas pud which I'm making with vegetarian suet and no nuts, I'm baking a Yule log but that will be full of butter (and it just doesn't taste as luxurious with marg). Mince pies with homemade vege suet mincemeat and non butter pastry. Trifle (again full of cream and custard) - do you think if I make an alternative with alpro custard and cream that will be ok?

I was also going to do a cheese board with fresh and dried fruit, because we are obsessed with cheese in this house. However, I understand that vegan cheese is pretty foul, what would be a good alternative there?
