Get ahead gravy

Anyone making gravy in advance and freezing it? I'm going to try it for the first time this year. I've looked online for some recipes, seen Jamie Oliver etc but just wanted to get any top tips and see if it actually works and is nice!

I use Jamie's get ahead gravy every single year. It's really delicious, I make double!

I make this every year, early in December. It isn't rated on here I don't think, but my family all love it.

Mine is in the freezer much to the relief of my daughter. She said as long as we have Jamie gravy and wine Christmas will be amazing.

I adapt the recipe a bit as I hate celery (I use one leek and a few mushrooms instead), I also miss out the star anise. It's so tasty. Mine always takes way longer than he says though. It always takes a while to brown enough for my taste. The cranberry sauce is a must for me.

Yes the cranberry sauce really brings it to life.

I also spend quite a bit of time browning it, but it's worth it

I just use Bisto Best + onion and celery salt and a couple of drops of Worcestershire sauce on the day. Always yum and so easy.

But each to their own.

Yes to Jamie’s get ahead gravy but ditch the star anise. I found overpowering. Agree that it really benefits from properly browning the chicken wings to get them really caramelised

We have made gravy in advance before. Not Jamie’s gravy tho just proper warty home made gravy.

We make sure we have a few meat based meals (cold meant and salad, curries, etc) leading up to Christmas so we can keep all the lovely juices from the meat. Will defrost in the night before as it will need a little thinning out, but is perfect.

Although, we make it on the day sometimes because a good old traditional gravy really isn’t that much effort.

Yes, we make it but leave out the star anise. I don’t want my Christmas gravy tasting of star anise.

@FreeButtonBee I also agree the star anise can be overpowering so I only put half the amount in. But it is absolutely delicious and works every time.

I usually-
-really brown off wings etc as others have said
-reduce star anise
-add red currant jelly rather than cranberry (personal preference as sweeter)

I've used the gravy with goose, duck and turkey and it tastes amazing with all!

We make it every year without the star anise too, I think it would ruin it for me, but I don't like spices in my Christmas dinner, no braised red cabbage or bread sauce here.

Well I made it and it’s in a tub in the freezer but I’m not sure what all the fuss is about.... it’s ok but it seems a little bland and very thin. I’ll keep it but I’ll probably end up thickening it with some Bisto best 😁
