Hi I need to make some deep red royal icing, in large quantities!!! I've been bug using extra strong red food gel but the best I can get it to is pink!! Can anyone suggest how to make it a dark red, it's supposed to be Santa's hat!! Thanks

Buy it ready made, so much easier especially if you need loads.

You want Sugarflair Red Extra. It’s a lot stronger than the bogstandard Sugarflair colours.

What do you need so much royal icing for? Curious Grin

I would buy some (Sainsbury's & probably other places) sell it. You have to be careful with the amount of colouring you put in things & using so much, even of the extra red, might be too much.

If you haven’t done it yet, you could always buy red sugarpaste from Hobbycraft, roll & cut it out with the same biscuit cutter, and stick it on with a bit of hot apricot jam. Would be quicker and less fiddly.
