I have some pork and some chippolatas in the freezer.

Was going to take them out tomorrow nigjt and let them defrost overnight in the kitchen (we're in London, it's pretty mild)

Should I be taking them out tomorrow lunch time and defrost them in the fridge?

Don't want partially defrosted food come Xmas dinner time.

I rarely freeze stuff, and I have never cooked pork before.

Hello. When are you going to cook? If tonight, then take it out lunch time, or even earlier, and defrost it in the kitchen.
I tomorrow, take it out tonight, and, again, no fridge needed. Your pork will be fine. I often freeze meat and mostly defrost it overnight in the kitchen.

We too defrost it overnight in the kitchen especially at this time of year. It’s cold enough to do so.

Always a countertop defrost here at this time of year. If you're really concerned can you take it out and put in the fridge this morning, then take it out early Christmas Day to finish defrosting?

It's just a small 'roast in the tin' bit of pork.

Think I'll counter top defrost later as the fridge is pretty full.
