Eggnog

How is this safe? Raw egg??? Is it something to do with the alcohol killing off bacteria or something?
I like tradition and if I could find a non-raw-egg-whites recipe I'd like to have a crack (get it?) at eggnog but not sure.
Any ideas?

I would think the alcohol would do the trick. I use Amarretto in marzipan which has raw egg in it ( though last year I did a recipe that whisked the eggs in a bain-marie )

As long as you aren't serving it to anyone who is immuno-surpresed .

Or you could use the cartons of egg (is there something called "TwoChicks" , I;ve seen eggs in Sainsbury in cartons)

I cooked mine!

I sort of put two recipes together so have a nose on Pinterest for one that suits.

So;
I mixed the egg yolks and sugar in a bowl until creamy in colour.
Put the milk and cream into a pan on the stove on low and warm.
Add a ladle if the milk mixture to the egg mixture and whisk quickly so not to curdle.
Then add this to the stove and warm slowly until it thickens. Not too hot!!

Bit of vanilla and nutmeg. Lovely!
