I’m cooking Christmas dinner for the first time this year. We always have a starter and then soup before the roast.

I want to do a cold starter I can prep in advance. Does anyone have any foolproof and tasty terrine recipes they would recommend?

Anyone tried the BBC Good Food ham hock terrine by any chance?

There's a great recipe in Leon fast food for a pork terrine wrapped in bacon that is ridiculously easy but very delicious, I've got some frozen in slices now, and use it up fo lunches. There's no liver in it so good if people don't like Offaly tastes too.

Sometimes I add pink/green peppercorns o jazz it up a bit, to make it more Christmassy you could add a handful of shelled pistachios and/or dried cranberries, as it would be delicious and pretty!

Would love the recipe, I fancy making a terrine this year and with no offal in it, there is a chance the fussy ones will eat it. Thx

I tried to make a chicken and ham terrine with sparkling white wine aspic last year. I was inspired by brasserie zedel and something I once ate in a hotel in Richmond.

I couldn’t find an exact recipe so I smooshed several recipes together.
I did a trial run a few weeks before Christmas and it was awful, really gross. The aspic was too sour and I’d added prunes I’d soaked in booze which was a huge mistake. It also had the look and texture of cat food which totally put me off.

This year I am considering doing a smoked salmon and cream cheese terrine which will hopefully not be disgusting.

Mary Berry's salmon and asparagus one is lovely. You can make it in advance and freeze it (as long as you remember to take it out of the freezer again!)
