Easy and make ahead appetisers/posh nibbles

We are having my in-laws down for Christmas this year (possibly a whole other thread! Grin) and have decided that instead of a sit-down starter we will do posh nibbles/appetisers with a few glasses of fizz while opening presents..

Would like them to be

Not too heavy
Easily made ahead, or at least an element of them done.
Bite size (no plates involved)
And look pretty...

Does anyone have any ideas or suggestions?

Ready made crustades - tiny bite size crispy cases. I get mine from IKEA but you can buy them in boxes in most supermarkets. I fill with prawn cocktail. Parma ham/rocket/mustard and carmelised red onion with feta cheese.

Make homemade rye crackers (just four ingredients) in advance, cut into tortilla size triangles and top with a small piece of smoke salmon a dollop of crème fraiche on top.

Cheese gougeres. Easy to make and delicious. I make them ahead of time and freeze them. Just need to quickly reheat them prior to serving.

Spiced sweet nuts.

I usually do finger things that don’t drip/go soggy and don’t take more than one mouthful to finish like a prawn with sauce and cayenne pepper on a small gem lettuce leaf, tiny puff pastry parcels stuffed with cumin spiced leek and potato, small discs of baked French bread (take a part baked loaf, slice thinly and bake) and top with whatever you like, croustades filled with smoked salmon and creme fraiche with a spring of dill, and once I tried a tortilla chip topped with finely chopped salsa/guacamole/creme fraiche. The possibilities are endless! Good luck.

Devils on horseback.
Assemble then chuck in the oven for 10 mins before everyone arrive, they smell yum.
Blinis with a dollop of horseradish/ creme fraiche amd some bresola.

Ooo thanks for the suggestions so far, definitely have put the baby gem lettuce leaves with the prawn Marie Rose sauce down, and also think will do something with salmon and blinis....
