We’ll be hosting my Mum, sister and in laws this Christmas and as my sister is likely to be working until 4pm we are probably going to have a relatively late Christmas dinner at 5ish rather than our usual 3pm.
We’re taking advantage of the later dinner time and inviting my Dad over late morning for a few hours so he can see the DC (he and my Mum cannot stand each other!). I want to do a really special light lunch or brunch whilst he’s here but obviously nothing too heavy or labour intensive.
Just wondered if anyone has any suggestions?

Last year I bought a selection of three luxury pates and served them with toasted bagels, sourdough and toasted brioche.

Bagels with smoked salmon and cream cheese.

Scrambled egg with something added, cheese, fish, herbs, soft cheese served on nice toast.

For really easy get a couple of 'platters' from the supermarket, one with Spanish ham and cheese and one of different olives, put on nice plates as a mini buffet.
