Mince Pies

Trying to get a plan together for Christmas baking, and trying to make Christmas Eve a bit easier this year.
I’ve seen a mince pie recipe that suggests freezing them before baking, and was wondering if anyone had tried this, and if they came out ok?

I always freeze mine. I've got two dozen in there already this year!

They come out just fine. Either just defrost on the side, or defrost /warm them slowly in a cool oven and serve with cream / Ice cream / custard.

Oops, sorry, just read you said before baking. I always freeze afterwards. Blush

I have frozen them raw and it was nice just to take a tray from the chest freezer, bung them in the oven and voila - fresh warm pies. But - I now freeze them ready cooked so they can be gently warmed.

I'll be freezing them ready cooked this year.

Amazing! Have so much to do in the days leading up to Christmas, so would be brilliant to have one less thing to worry about.
So they don’t go soggy if you freeze them after baking then?
How far in advance can I cook them?

Nope, no soggy bottoms once defrosted. And they last forever! I found a bag left over from last Christmas recently (I was having a clear out getting ready for restocking for this Christmas!) and they were great! Mine pies in October - awesome!
