Stuffing

I fancy trying out a new stuffing. Usually do sage and onion and cold sliced sausage meat stuffing.

Any tried and tested recipes out there?

This is my grandmother recipe and absolutely delicious

a pack of chestnuts roughly chopped
1/2 an onion chopped
1/2 lb sausage meat
6 oz of breadcrumbs
an egg
and a few splashs of stock

mix it all together and stuff your bird

easy peasy and very yummy

I do something v similar.

Random quantity sausagemeat
Packet chestnuts chopped fairly large
Some left over cranberries
Possibly some dried fruit eg apricots if I have them hanging about but not vital
Sometimes remember the egg, sometimes don't
Seasoning

Roll into balls and put in oven.

Or for actually putting in bird:
Chopped apple
Chopped prunes

Stuff what you feel is a suitable amount in. Try to remember you put it there and actually serve it.

Anna I'm sensing you have had a 'whoops stuffing' moment, as I do every year when I forget what presents I've bought and where I hid them....

I like a strong, rich stuffing alongside a lighter one. So I do an apricot, pine nuts, sausagemeat, white breadcrumbs, white wine, herby one and another with prunes and/or dates, onion, chestnut, brown breadcrumbs, bacon, sausagemeat. I never work to a recipe, I just bung it all in a large frying pan and add things until it tastes delicious.

TwitterQueen absolutely. In my defence, there was a lot on each plate so it was hard to tell something was missing Blush

Also Christmas goes on a long time in the Magnani household - we ate it eventually Grin
