Freezing roast potatoes, parsnips and bread sauce

Hi

Has anyone successfully part cooked (I.e booked for a few minutes and then roughed up) and frozen potatoes for roasting on Christmas Day? Similar with parsnips, is it a successful way of cooking them? Also bread sauce! Just trying to minimise the work on Christmas Day so I can enjoy the morning playing with the kids! Thank you.

Potato doesn't freeze well, don't ruin the roasties by trying.

I wouldn’t freeze potatoes, but last year I convinced DP to cook them most of the way the day before, then finish them on the day for 15 mins. They always take longer than we expect to it was handy to take the pressure off a bit and free up oven space for everything else.

He always says my reheated leftovers are better the next day so it makes sense to do it on purpose!

I part cook my spuds a few days before and put them in foil trays in the fridge. They'll keep for a week. Same with all my veg, carrots, sprouts, cauliflower cheese fully cooked. Frozen petit pois microwaved on the day, parsnips are the food of the devil 😂😂
Mash made a few days in advance and put in an ovenproof serving dish too. Make gravy beforehand and add meat juices on the day. Cold starter eg seafood platter or egg mayonnaise (very 1970s). Meat cooked on the day. Take all dishes out of fridge when meat goes in oven. Once meat cooked, put all other dishes in v hot oven.
Always a success, never stressful!

I've done all three and they were fine. I part-roasted the spuds as well though, didn't try and freeze them at the squishy roughed-up stage.

I know this is forbidden to say, but the Aunt Bessie's roasties cooked in goose fat are pretty good. My parents use them to supplement/reduce the moving parts of Xmas dinner

I freeze parsnips every year and roast from frozen.

I peel and leave in a pan of freezing cold water overnight. Same with carrots and parsnips
