Flexible Mincemeat recipe

So, I’ve started my Christmas poncing and have started on my mincemeat, cake and pudding. However now I have a bunch of things leftover which will end up clogging up my cupboard for another year.

Is there a flexible-ish recipe for mincemeat that I could use which will finish off most of those odds and sods? Or a rough ratio of fruit to suet to sugar for example?

I don't have a recipe, but I know I have seen them around and I'm sure that would be quite flexible!

Delia has a mincemeat cake recipe which might do the trick. Or make a fruit loaf or boiled fruit cake.

I made some last week and just guessed quantities. It's delicious! I think you could probably just throw everything in and see what happens.
