What meals will you cook from your leftover turkey?
I am thinking Risotto, Pasta , Stir Fry. Would love to hear any recommendations from more seasoned cooks.Smile

Chuck it in the blender with any other leftovers and I mean ANYTHING, be it veg, roasties, spuds, stuffing, whatever.

Make patties and shallow fry them. Christmas bubble and squeak. Delish.

I do similar, chop all leftover veg, stuffing etc and fry up then serve with cold meats & pickle/chutney.
Curry, fajitas.
Jamie Oliver has a fab recipe for Turkey, ham & leek pie which uses leftover stuffing and gravy too.
Yum!

We make sandwiches from the turkey and ham (in addition to the squeaky patties!)

And offer them to those in doorways. Many say no thanks, but others do.

Doesn't matter we offered anyway.

My wonderful late MIL gave me the recipe for turkey cheeseburgers.

Make a really really thick cheese sauce (white roux add tonne of cheese). Mix in loads of crumbled turkey. Shape into patties, flour (or crumb) and shallow dry and finish off in oven.

She passed away 5 years ago and her dickhead son went off with another woman 4 years ago. But this will always now be mine and my girls Xmas tradition.

For the last bits, mulligatawny soup - it's supposed to be with fresh chicken, but works v well with leftover turkey, delish. Found a recipe on BBC site... basically fry an onion soft with curry powder, add some chopped celery and carrot and stock, simmer a while, then add rice and chopped apple - just add the chopped turkey for last 5 minutes to heat through thoroughly.
I first made this with leftover cooked turkey that had been in the freezer for months - was about to chuck it until I thought of trying this.
