Chutney recipes

I want to make a home made gift for my DF this year. I'm thinking a hamper including a big meat pie, selection of cured meats, cheese and chutneys.
Any fab recipes for caramelised onion, chilli jam or Christmas chutney?

I made this apple chutney from BBC good food www.bbcgoodfood.com/recipes/2646/classic-apple-chutney. It has turned out very nice but read through the comments first to make some adjustments - I think the amount of sugar and cider vinegar were recommended to be quite significantly reduced. Also Nigella's chilli jam is good.

I used that BBC recipe for a stack of windfalls from dd's garden. It is on the sweet side unless you're using all Bramleys, but still v nice esp. with cheese - I added a finely chopped chilli, too.

I never bother peeling the apples any more - such a faff - just wash them and cut off any manky bits. I honestly don't think anyone would notice the difference. I never peel apples for anything any more, except apple cake and my Christmas puds, which I haven't got around to making yet - always late and none the worse.
