Premature I know, but using up leftover turkey

Cleared out the freezer the other day in preparation for Christmas, and found 2 packs of cooked turkey bits from last Christmas!

Was tempted to chuck, but suddenly thought of mulligatawny soup, which I'd never made before, despite making lots of soups.

Found a recipe on all recipes - it's curry flavoured, with rice, veggies and apple, and was delish - a substantial main meal soup for me and Dh. Recipe said fresh chicken breast but the frozen turkey was fine. It also specified to add double cream at the end, but since I had some frozen coconut milk to use up, I added that instead. Also rather more curry powder than specified, since we like Hot.
And a bit of mango chutney!

Will definitely make again - great way of livening up the leftovers.

We use some "leftover ham" and "leftover stilton" (usually purchased especially for this) and turkey stock to make a potato gratin that is absolutely fab - also needs rosemary and freshly ground black pepper.

I usually find a breast of turkey in the freezer in early autumn (none this year - boo!) and we have a good dinner of either a proper curry (made by starting from fresh spices and frying onions), or if I'm really lucky and still have decent gravy (either turkey, or proper chicken gravy), we might do a leftovers roast dinner (fresh roast potatoes, or leftover mash reheated with extra milk, diced onion, lots of herbs and some frozen peas all mixed through - delish!), and some veg (hopefully it's cool enough to do roast roots!).

I have loads of ways to use up anything that is leftover - so no one ever needs to get bored of turkey sandwiches or a plain turkey curry from a jar.

At the moment, we are working on clearing the freezer too - lots of single portions of dinners have been used up over interesting meals.

But I am trying to work through the seventy-million portions of pumpkin soup that we made after getting DF's "daddy-sized" pumpkin from his garden! I even gave a load to my neighbor, and froze a few bags of pumpkin chunks for roasting root veg, but I need to use some up rather quickly!

And I am getting fed up of pasta bake with leftover pasta dinners.
