Making food in advance and freezing

So I am hosting everybody this year. What can I make in advance ? Stuffing? Cranberry sauce? Cheesecakes?

Stuffing.
Spiced red cabbage.
Cranberry sauce.

I wouldn't freeze a cheesecake but couldn't really say why!

I do the stuffing, red cabbage and Jamie Oliver's gravy in advance and freeze them.

I do the roast potatos and parsnips til half done, then freeze them on foil trays that can go straight in the oven. Also the red cabbage, bread sauce.

I've done various stuffings, bread sauce, cranberry sauce, roast potatoes, potato gratin, and various desserts - a notable freezable success was Nigella's spiced chocolate cake. I don't spend much of christmas day in the kitchen Grin

Notapuffin that is what I am trying to avoid. Have you ever frozen a no bake cheesecake?

Do not freeze cauliflower cheese. It goes all mushy and watery on reheating.

Unfortunately I speak from experience.

Cheese sauce separately should be fine.

Cheats cauliflower cheese: make a great cheese sauce, a little thicker than usual. Put frozen cauliflower, maybe mixed with broccoli, In a shallow layer in an oven dish. Cover with cheese sauce, breadcrumbs and cheese. Bake for an hour. Lovely cauliflower cheese.
