Christmas Cake

I personally can't stand it but make one every year for the DH.

What I had been wondering, I usually put the fruit in its boozy bath (sherry) for two weeks, then make the cake, then feed the cake once a week for three weeks. Is there any taste benefit to making it sooner? Can you have too much alcohol in it and ruin the flavour?

I make this cake every year (usually in September) and feed it every week in the run up to Christmas. This year I am making in August (tomorrow in fact!) because it gets better the longer it has to mature. I think the only way you can have too much alcohol is if you over feed it but I think feeding it once a week is more than enough, sometimes I forget and it can go a couple of weeks without a boozy top up and it's still great.

Brilliant, thank you. Now I'm working less, I might start it this month too. Usually I start 5 weeks before and it all feels a bit rushed.

Im planning a regular mulled wine supply too from end of November so off to find decent recipies for that!

Viva I use Capn Morgan spiced rum. Quite vanilla-y. No bitterness.

I have one cake that didn't get used last year so it's still being topped up. Well over a big bottle of hennessey in it by now, hopefully it'll pass! (It's going to mate who couldn't pick it up in time last year so they know they're taking a gambleGrin)
