I've got some dried mixed fruit which I've used to make flavoured liquers so was thinking I could make mincemeat with it now I'm finished but how?

step one, soak fruit in liquor then mix with sugar, apple and suet, seal in a jar and leave.

Sounds easy peasy!

Do you think it's too late or will a week in the jar be okay?

Not too late, I use it both fresh and stored. As long as everything was nicely soaked you are good.

If you are intending to store for a while it is best to gently heat to dissolve the suet, which will then 'seal' the fruit and stop it going off. It will keep for years and years if you do that.
