Buffet help!

I need some inspiration for a buffet I'm doing for 8 adults and 3 kids the day after boxing day. I have 2 gluten free and one veggie to cater for. Maybe not a buffet and I could cook and easy meal like the type where you do a stew or something and everyone helps themselves?

I'm so stuck any ideas would be awesome XX

Veggi chilli, some kind of Mexican chicken, rice, baked pot, cheese and guacamole.

I think a meal with sides would be easier than a buffet.

I'm doing a tapas style buffet for Boxing Day - I'm thinking everyone will be sick of Christmassy foods by then and will just want to pick and dip. Meatballs, spicy sauce, crab cakes, patatas bravas, breads, a chicken and chorizo rice dish. To be fair I'm cooking and freezing most of it beforehand. There are loads of veggie tapas recipes.

Bread and crackers - can you get in some gluten free alternatives.

Homemade sausage rolls (using sausage meat and jus roll puff pastry and maybe make cheese and onion ones for the veges)
Home made potatoe salad or new pots with mint and butter
Homemade coleslaw
Celery sticks, toms, cucumber, spring onions

Pickled onions, gherkins etc
