Turkey questions

I'm aiming to cook xmas lunch for 7 adults, but only 6 eat meat as I'm veggie.

I'm a bit of a novice so I need some advice. Help me ladies please.

How big a turkey should I buy if I'm aiming to give 6 adults a good lunch plus have some, but not loads, left over for sandwiches?

How should I work out how long it will take to cook? I know that it's meant to be so many minutes per kg but I need some specifics!

If i buy a frozen one then how long should I allow to defrost it?

What do I do with giblets?

How do I stuff it or is it easier to make the stuffing completely separate?

Gravy, how do I make it properly?

easier to do stuffing seperately.

this will tell you what size turkey you need and how long to cook it

Do you by any chance have the Delia Smith Complete Cookery book as she explains it all really well and every time I have used her recipe for turkey, and the timings, it has alays been perfect.
Giblets-simmer them in water for about an hour to make stock for the gravy.
I cheat when making gravy and add Bisto, but I also use the giblet stock and some of the water from the boiled veggies.
